Wild jack are uber seasonal. They grow only for few weeks in the month of April in & around Udupi, Mangalore. This summer fruit grows on trees & is delicious & sweet on ripening.
It's called pasponos in Konkani, hebalasu in Kannada.
Raw wild jacks are eaten only on pickling them. They are stored in brine & are then used to make yummy dishes. They can be stored for year or two in brine.
Here's how it is pickled when raw. Once it starts to ripen you won't be able to pickle them. While they're mature is when they're pickled.
