Cabbage Cauliflower Upakari Recipe (Stir Fry)
Cabbage & cauliflower are finely chopped & made into yummm upakari. Upakari is the Konkani name for stir fry's. I first had this when I went to visit my husband's aunt. I ate it for 2 days for all meals. I make it often then on slightly differently as my family enjoys it with curd rice, dalithoy-rice or chapatis.
Ingredients:
- 1 cup chopped cabbage
- 3/4 cup chopped cauliflower
- 2 tablespoons of oil
- 1/4 teaspoon mustard seeds
- 1/4 teaspoon urad dal (optional)
- 1 twig of curry leaves
- 1/4 teaspoon red chilli powder
- 1/4 turmeric powder
- 1/4 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- Salt to taste
- 2 tablespoons of coriander leaves finely chopped (optional)
- 1 small onion finely chopped (optional)
- Serves: 2
- Prep time: 15 minutes
- Cooking Time: 10 minutes
Preparation Method:
- 1. Heat oil in a wok.
- 2. Add mustard seeds, once it splutters, add in urad dal (optional), curry leaves.
- 3. Once urad dal starts to brown, add in finely chopped onions & saute until they soften. You may skip onions & still this stir fry tastes great.
- 4. Add in finely chopped cabbage & cup chopped cauliflower, salt, turmeric, red chilli, cumin, coriander powder.
- 5. Add in 1/2 cup of water.
- 6. Cook closed on medium flame until veggies cook through. High flame makes the water evaporate leaving the veggies not cooked.
- 7. Add water if required in between, keep sauteing in between to ensure uniform cooking.
- 8. Add finely chopped coriander leaves on top.
- 9. Enjoy with curd rice, chapatis, dalithoy-rice.
P.S: I use a chopper to chop cauliflower & it saves time.
