Veg Cutlet

My mom prepares these amazing cutlets as tea time snacks, which we all love. She prepared them for her new son-in-law after our marriage and he absolutely loved them. One day he asked me to prepare them!! I barely knew how to cook at that time. I had to ask mom for the recipe and prepare them for my love. For then on I always prepare these for him as he lovezzzzz them. Prep takes time but in the end it feels its worth the effort.
We normally savour them with just ketchup. My mom and aunt prepare navaratna chutney (sweet, spicy, sour coconut chutney) and serve along with ketchup. You can serve these cutlets with any chutney of your choice. It also goes well with mint, coriander chutney.

Ingredients:

3 potatoes
1/2 cup peas
2 beetroots
7-8 garlic cloves
3-4 onions
4-5 green chillies
1 tea spoon urad dal
1 tea spoon of channa dal
1 tea spoon mustard
5 table spoons of oil
2 table spoon of garam masala
3/4th cup sooji/rava or fine bread crumbs
Salt to taste

Prep:

Boil and peel the potatoes. Mash them well.
Boil peas until they are soft and mash them a little.
Mash the garlic nicely and chop the onions.
Finely chop the green chillies and grate the beetroot.
Toast can be used and finely powdered in a mixer.

Method:

Heat oil in a wok. Add mustard, green chillies, garlic, urad dal, channa dal and fry until the dal are fried.
Add onions and fry until they start to brown.
Add beetroot, very finely smashed potatoes, mashed peas and salt and mix.
Saute and cook until the beetroot is cooked.
Add garam masala and mix. Remove off heat.
When the cutlet mixture have cooled down a little, make round balls of this mixture. Roll them in rava/sooji or bread crumbs.
Press them a little to form patties.
Apply ghee/oil to tava and shallow fry the patties on both sides until the crust starts to brown.
Serve hot with sweet/spicy chutney and/or ketchup.

Navaratna Chutney: (Sweet, spicy, sour coconut chutney)

You can serve any spicy chutney you like with cutlets but navaratna chutney goes amazingly with cutlets.

Ingredients:

4 Cashews
few raisins
1/2" ginger
2 garlic cloves
1 tea poon tamarind
1/2 cup grated coconut
1/2 onion
2 tablespoons of chopped fresh coriander
1/2 teaspoon jaggery
3 green chillies
Salt to taste

Method:

Grind all the ingredients together by adding enough water to make a thick paste but very smooth paste.
Remove chutney into a serving bowl and serve with cutlets.
