Tempered Buttermilk (Thaak Phaan Recipe)
Thaak phaan is buttermilk that’s tempered. Great to drink chilled or otherwise, lovely to eat rice with. Would you like to see other variations of Thaak phaan?
Procedure:
- Blitz curds for 20 seconds to get smooth buttermilk.
- Add water to dilute it as per consistency you require, how watery you like it.
- Add salt.
- Add a garlic tempering to it - Heat oil in a tempering pan, add garlic, fry until they start to brown. Add in dried red chillies pieces. Fry them for 10 seconds. Add the tempering to the buttermilk made.
- Enjoy it with rice or drink it.
P.S: If you use chilled water, chilled curds to make it, I love gulping on it.
If you make it & keep it in the fridge the oil tends to harden, tastes lovely nonetheless.
