Wheat Semolina Dosas (Rulava Doddak/Rulava Bakri)

A very simple, healthiest, easiest to make breakfast that mom always fell back on when she didn't prep for breakfast the previous day. One nutritious but delicious breakfast that she could make easily. (Don't underestimate the nutrition you get from wheat semolina (sooji rava) that you take for granted.)  All you need are 5-6 simple ingredients. 5-6 minutes of prep. 5-6 minutes to make dosas. P.S: They're full of flavour from coriander leaves.

These semolina dosas are called rulava doddak/rulava bakri in Konkani. 


Ingredients:

  • 1 cup of wheat semolina (Chiroti rava or sooji rava should do. Roasted or not roasted doesn't matter.)
  • 1/2 cup grated coconut (You can skip grated coconut but it'll make your dosas hard & not so tasty, make it mixie if you're lazy, yup I do that.)
  • 3/4 cup curds 
  • Salt to taste
  • 3-4 green chillies
  • 1/4 cup chopped fresh coriander (too much of it & they won't taste good, too little & they won't taste good either) 
  • Water as needed

Serves: 2

Prep Time: 5-6 minutes

Cooking Time: 5-6 minutes


Preparation Method:

Mix sooji rava (wheat semolina) + curds + salt + water + coriander leaves finely chopped + green chillies (finely chopped or smashed) + grated coconut (lots of it as it makes your dosas soft soft). Keep the batter medium thick in consistency. 

P.P.P.S: Mom first smashes pieces of green chillies with salt and then smashes grated coconut + chopped coriander leaves along with them. Then adds rest of the ingredients to make a batter. Makes a world of difference. 

P.S: Some of my relatives add finely chopped onions to the batter. See if you like them with onions too.


Serving suggestions:

We at home don't need anything to go with these dosas. A spicy pickle would be lovely to eat these dosas with. Hubby loves them with butter. Any spicy chutney pudi you like could also go well with it. Experiment as you please.
