Beetroot Stir Fry GSB Konkani Style (Beetroot Upakari Recipe)

Ingredients:

  • 1 big beetroot
  • 1 tablespoon of oil
  • 1/4 teaspoon of mustard seeds
  • 1/4 teaspoon of urad dal
  • 1 dried red chilli
  • 1 green chilli
  • 1 twig of curry leaves
  • 1 tablespoon of grated coconut
  • Salt to taste
  • Water

Serves: 2

Prep time: 5-7 minutes

Cooking time: 5 minutes


Preparation Method:

1. Peel, chop beetroot into matchsticks.

2. Heat oil in a pan, add in mustard seeds.

3. Add in urad dal, fry until it starts to turn brown.

4. Add slit green chilli, pieces of dried red chilli, curry leaves. Let sizzle for 10 seconds.

5. Add beetroot pieces, salt, 1/2 cup of water & cook on medium heat.

6. Cook until they're cooked through. Add water as required, as much as required. We require dry upakari in the end.

7. Add grated coconut on top & mix well. You'll have delicious upakari.
