Ridge gourds can be made into delicious stir fry. Simple, easy, quick, nutritious.
Ingredients:
Serves: 2
Prep Time: 3-5 minutes
Cooking Time: 3-4 minutes
Preparation Method:
1. If you're just preparing this stir fry then just peel the ridge gourd using a peeler.
2. If you're making chutney of the peel, using the inner flesh to make this stir fry, then chop off the peel using a knife & store it.
3. Chop them into roundels or into cubes.
4. Heat up a pan, add in oil. Add in mustard seeds.
5. When they start to splutter, add in urad dal.
6. When they start to brown, add in slit green chillies, pieces of dried red chillies.
7. Let them sizzle for a few seconds. Add in curry leaves.
8. Add pieces of ridge gourd, salt, water.
9. Allow them to cook through.
10. Once they're well cooked, water has all evaporated, add in grated coconut, mix well.
11. Enjoy.
