I required this recipe as a beginner more than a decade ago, so if you want it, here it is. It'll also help us decide what to cook while meal planning being here.
Ingredients:
Tempering:
Serves: 2
Prep Time: 20-25 minutes
Cooking time: 15-17 minutes
Preparation Method:
1. Chop ivy gourds into thin pieces.
2. Heat oil in a pan, add in mustard seeds, let them splutter.
3. Add in urad dal & fry them until they start to brown.
4. Add in slit green chillies, curry leaves & let them sizzle.
5. Add in chopped ivy gourds & mix them well.
6. Add in 1/4 cup water, salt & cook them closed on low heat.
7. Cook them until they are well cooked. Add water as required, when required little by little. We want a dry stir fry/upakari in the end.
8. Once ivy gourds are well cooked add in grated coconut, mix well.
9. Serve with rice & dalithoy. Enjoy.
