Rava Idli / Sooji Idli / Steamed And Spiced Semolina Dumplings (Dhaya Idli)

Rava Idli / Sooji Idli / Steamed And Spiced Semolina Dumplings (Dhaya Idli) are semolina idli's made using bombay rava. The semolina is fried nicely in loads of ghee, spiced and then steamed. My mom usually prepared this yummy, dhaya idli (idli made with curds, as we call it at home in Konkani) when there's a huge stock of curds in the fridge that has to be used. She prepares a simple coriander coconut chutney (kothambri palle chutney) to eat with the idli's. The best rava for preparing these idlis is the bansi rava also called as kesari rava.

Ingredients:

2 cups of rava
3-4 green chillies
1 cup curds
2 tablespoons of cashew
1 teaspoon urad dal
2 leaflets of curry leaves
2 tablespoons of chopped fresh coriander 
1 teaspoon mustard seeds
1 inch ginger
1 tablespoon oil
3 tablespoons of ghee
salt to taste

Preparation Method:

Heat a deep bottomed pan/wok and add oil, mustard and allow it to to sizzle.

Once the mustard starts popping, add urad dal, cashews, finely chopped green chillies and ginger and saute until the urad dal and cashews starts to brown.   

Add curry leaves and saute for few seconds.

Add rava and mix. Add ghee and fry the rava on low flame until you smell the fried rava. Keep sauting for uniform frying. Rava has to be fried well. You get a nice aroma of hot rava in ghee. 

Add salt and mix. Remove off heat and let it cool completely.

Once its cooled, mix it with curds, chopped fresh coriander, water.

Allow it to soak in curds and water for 5-10 minutes.

Meanwhile the rava takes up water. Add enough water to have a medium consistency.

Pour the batter into idli stands and steam them for 15-20 minutes.

Add grate carrots on top of idli batter in the idli stand if required. You can even add fresh peas, add cooked, finely chopped beans.

Serve hot with potato bhaji and chutney. 

P.S: The curds you use should be sour, but not be too sour or else you'll have sour tasting idli's.
