If you like kadgi chakko - raw jackfruit spicy sweet side dish, you'll like this lady's finger side dish too. It's spicy, sweet with a delicious coconut masala. Crunchy lady's fingers go well with the masala.
Ingredients:
Lady's finger - 250 g
To make masala:
1/2 cup grated coconut
4 dried red chillies
1 chickpeas sized tamarind
1/4 teaspoon jaggery
Salt to taste
1 teaspoon urad dal
1 teaspoon coriander seeds
For tempering:
2 tablespoons of oil
1/4 teaspoon mustard seeds
1 twig of curry leaves
Prep Time: 20 minutes
Cooking time: 5-7 minutes
Preparation Method:
1. Wash lady's fingers well, dry them completely. They'll otherwise get slimy.
2. Chop them into small pieces.
3. In a pan, heat oil, add in mustard seeds.
4. Once they splutter, add in curry leaves, let them sizzle.
5. Add in chopped lady's finger, saute until they are cooked well.
Keep sauting on medium flame, without closing so that they don't stick to the bottom on the pan.
6. Don't close it so that it's water free & doesn't get slimy.
7. Meanwhile make the masala.
8. Fry dried red chillies for few seconds without oil to crispen them up.
9. Fry coriander seeds, urad dal without oil until urad dal starts to brown.
10. Let them cool down completely.
11. Grind a dry masala with grated coconut, fried red chillies, fried urad dal, coriander seeds, tamarind, jaggery, salt.
12. Add it to to the almost well cooked lady's finger.
13. Mix well & saute for a minute or 2 until the rawness of the masala goes off, masala is well cooked.
14. Please do not add any water. Keep sauting to prevent lady's finger from sticking to the bottom of the pan.
15. Remove off heat & enjoy as a side dish.
