I just love yardlong beans stir fry. Simple yet tasty, healthy and very easy to prepare. A spicy side dish that we konkani's prepare for lunch and dinner, normally eaten as a side dish with rice. We konkanis prepare a upakari every day, with almost every vegetable.
Ingredients:
2 cups of 1/2" pieces of yardlong beans
2 tablespoons of grated coconut
1 tea spoon mustard
4 chopped green chillies
few curry leaves
1 tea spoon urad dal
Salt to taste
Serves: 2
Prep Time: 10 minutes
Cooking time: 15 minutes
Ready In: 25 minutes
Preparation Method:
In a wok add oil and mustard. When they splutter add urad dal, green chillies, curry leaves.
Fry until the dal starts to brown.
Then add chopped pieces of yardlong beans and mix.
Add enough water for the beans to cook. Add salt and mix.
Cook closed till no water remains and the beans are done.
Add grated coconut, mix and remove off heat.
Serve hot.
