This recipe below here is the easiest one, a sure shot recipe that never fails. I've been using it the past 3 years & is the quickest way to make buns. And they're the healthiest buns you can make.
Ingredients:
Serves: 2
Prep Time: 10-15 minutes
Resting Time: 12 hours
Frying time: 8-10 minutes
Preparation Method:
1. Grind bananas with salt, sugar, curds/buttermilk in a mixie jar.
2. Add cumin seeds to them, mix well.
3. Add wheat flour & mix well until the mixture doesn't take in more flour & you have a very soft dough.
4. Next, use your hands to gently mix in the flour. Continue working the dough to bring it together into a ball.
After minutes of kneading, it should become cohesive and smooth, we require a soft dough.
If the dough is still too sticky, add more flour to it & knead.
5. When the dough comes together, shape it into a ball and cover it with a damp cloth & let it rest for at least 12 hours at room temperature. Leave it closed.
6. After the dough rests, make tiny balls of dough, flatten them using a rolling pin into thick circles. Use wheat flour to roll them. (The more you flatten them, the thinner they become, the more they get fried & become crispy, crunchy on frying. If they're thick they'll be soft & fluffy.)
7. Deep fry them in rolling hot oil. Fry them uniformly on both sides until they're cooked through on medium heat. You'll know with the change in colour. They get darker as they fry.
As soon as you add them into rolling hot oil, with the bubbling oil, they'll start to puff up & come to the top of the oil.
If they don't, then give them a few pats on top using the side of the frying spoon so that they puff up.
Tips:
Sour curds, buttermilk is a must.
Resting period of 12 hours is a must. During winters increase it to 16 hours.
These 2 make sure the buns puff up & we get soft buns instead of dense ones.
