This snake gourd stir fry is a simple side dish for a weeknight dinner. It's called podale upakari in Konkani. Podale refers to snake gourd in Konkani & upakari means stir fry. A Konkani meal is complete when there's a stir fried vegetable. It's a side dish of sorts prepared using different veggies & is called upakari.

Preparation Method:
Prepping snake gourd:
1. Peel the skin of snake gourd using a knife. Then give it a good wash. Or else snake gourd tastes a little bitter.
2. Here's how we peel snake gourd. Just run the knife over the snake gourd so that the white layer comes off like in the pictures below.
3. Then chop them into thin slices.
