Mushroom Soup Recipe

Winter is here!! 🙎 🙍 It's so damn cold that not all the jackets, not all the socks, couldn't keep me hot & warm. (Singing like "Humpty dumpty sat on a wall" rhyme.) 😄

I'm sure you all are craving something hot & steamy all day long. 🍜 🍲 ☕️  I don't drink tea or coffee, so my go-to drink is a steaming hot bowl of soup. 🍵  I love healthy, easy to make, quick soups like this mushroom soup here. Hardly takes 10 minutes of prep & it's delicious. An easy-peasy soup you can make at home super quick & enjoy! Also, since it’s mushroom, it’s super nutritious & full of protein.

Ingredients:

  • 12 mushrooms
  • 1-2 garlic cloves
  • 1 medium sized onion
  • 1 bay leaf
  • 1/2 cup milk
  • Salt to taste
  • 1/4 teaspoon of pepper powder/freshly ground pepper
  • 1/4 teaspoon of cumin powder
  • 1/4 teaspoon of coriander powder

Serves: 2

Prep Time: 10 minutes

Cooking Time: 10 minutes


Preparation Method:

  1. Heat up a saute pan. Add in oil. Add finely chopped garlic. Let them sizzle for few seconds.
  2. Then add a bay leaf, finely chopped onion, salt to help fasten their frying.
  3. Saute on a medium flame until onions turn translucent.
  4. Then add in washed, roughly chopped mushrooms & salt.
  5. Cook closed until mushrooms cook through. Mushrooms give out enough water to cook them through.
  6. Once the mushrooms are done, put off the flame & let the mushrooms cool down completely. 
  7. Remove the bay leaf & then grind them using little water into a smooth paste. Use as little water as possible. 
  8. Transfer the ground paste into a cooking vessel. Add salt, milk, cumin powder, coriander powder & mix well.
  9. The soup will thicken on cooking & with time. Add milk/water to bring it to the desired consistency. Some like it thick, some like it like a soup. So. 😉
  10. Simmer for 3-4 minutes & serve hot.

P.S: 

1. This soup is creamy without using any fresh cream. But you can use 2-3 tablespoons of cream while cooking the soup if you wish to. I choose to skip it to avoid extra calories. 😇 😉

2. You can use a teaspoon of dried herbs or some fresh parsley or thyme for an extra zing.

3. Saute finely chopped bite-sized mushroom pieces with a tablespoon of butter & salt until they are golden brown. Top your bowl of soup with a tablespoon of sauteed mushrooms & enjoy! Pieces of well-sauteed mushrooms add a nice bite to every spoonful of soup.
