Carrot kosambri is a traditional salad that is full of flavour and taste. Carrot kosambri is highly nutritious, healthy and is great for your skin and for you. Here's a quick and easy recipe to prepare carrot salad in the traditional Konkani style:
1/2 teaspoon urad dal
1/4 teaspoon mustard seeds
1 tablespoon of oil
1 leaflet of curry leaves
1 tablespoon of grated coconut
1 tablespoon of lemon juice
1 teaspoon of chopped fresh coriander
1 dried red chilli
1 green chilli
Salt to taste
Preparation time: 10 minutes
Method of preparation:
Peel and grate the carrot. To the grated carrot in a bowl, add salt, freshly grated coconut, chopped fresh coriander, finely chopped green chillies, lemon juice and mix well.
Seasoning the salad: Heat a tablespoon of oil in a tadka pan, add in mustard seeds. When they start to splutter add in urad dal and fry them until they start to brown. Then add in curry leaves, roughly broken pieces of red chillies and fry them for a minute. Remove the tempering off heat, add it to the carrot mixture in the bowl. Mix well and serve the kusumbri as a side dish for lunch.
