Carrot Halwa (Gajar Ka Halwa)

Carrot halwa is a very famous Indian pudding. A dessert which is very easy to prepare and takes hardly any time. Here goes the recipe for gajar ka halwa:

Ingredients:

6 medium sized carrots peeled and grated
1 cup milk
Sugar - 1/2 the amount of grated carrot or little less
3 table spoons of ghee
1 tea spoon cardamom powder
Raisins
Chopped, roasted cashews
Chopped almonds

Preparation using a microwave oven:

Mix grated carrot with 1/4th cup milk and sugar in a big deep bowl and microwave covered for 5 minutes.
Add remaining milk and microwave covered for 5 minutes.
Add ghee and cardamom powder. Mix well and microwave uncovered for 10 minutes, stirring in between.
Add raisins, chopped almonds, chopped, roasted cashews and mix. 
Serve hot decorated with nuts.

P.S: You can add all the milk at once but it'll spurt out and dirty your oven :-) 
Carrot in itself is sweet so don't add too much sugar. 

Preparation over gas:

If your not a fan of cooking in an oven, you can prepare an equally or more delicious halwa on the stove top too.

In a cooking pan, mix grated carrot with 1/4th cup milk and sugar and cook closed on a medium flame. The sugar needed is usually a little less than half the quantity of grated carrots. Adjust sugar according to your palate.

Continue cooking by adding rest of the milk little by little, as the milk spurts out if added all at once and cooked closed.

Cook closed on a medium flame until all the carrot is cooked.

Once all the milk evaporates, add in ghee and cardamom powder and mix well.

Saute till any milk remaining evaporates and the mixture gets dry and sticky on a low flame.

The more ghee you add, the tastier the halwa.

Add raisins, roasted cashews, almonds and mix and remove off heat.

Serve halwa hot decorated with nuts.

Roasting cashews:

Roasted cashews taste absolute heaven. So, you can roast cashews for added flavour. Roast chopped cashews with a table spoon of ghee in a small wok until they start to brown or microwave them on a microwave plate for 1 minute to get golden roasted cashews. As easy as that!
